TACO SALAD - The taco salad is a Mexican inspired dish, with many variations, which first appeared in America in the 1960s.
The salad is often served as a fried flour tortilla shell stuffed with shredded iceberg lettuce and topped with diced tomatoes, shredded Cheddar cheese, sour cream, guacamole, and salsa. The salad is topped with taco meat (ground beef) or seasoned shredded chicken. The salad may also have a base of refried beans on the shell before the lettuce is added.

PARTRIDGE (IN A PEAR TREE)
ROAST PARTRIDGE
4 partridges, dressed
1 c. milk
1 tsp. salt
1/4 tsp. pepper
1 lemon rind
8-10 slices bacon
Wash birds in milk, drain and pat dry. Season with salt and pepper. Place strips of lemon rind and bacon on birds. Place 1 or 2 birds on large strip of aluminum foil, roll edges to make a tight package. Bake in 400 degree oven for 40 minutes, then open foil for 10 minutes to brown the birds.

Spaetzle
Literally translated from German as "little sparrow," spaetzle is a dish of tiny noodles or dumplings made with flour, eggs, water or milk, salt and sometimes nutmeg. The small pieces of dough are usually boiled before being tossed with butter or added to soups or other dishes. In Germany, spaetzle is served as a side dish much like potatoes or rice, and is often accompanied by a sauce or gravy. |
