I dunno if anyone has posted this one, or if I did for that matter.
I make Lasagna with cheese stuffed Raviolis. Its got the noodles and the cheese layer all in one. And just make it however you like it.
I use spinach in mine, but those that use meat could do that too. And I use store bought sauce to make it even easier. Then top it off with shredded mozzarella. And make a salad and garlic bread to go with it.
Just make sure you boil the raviolis first, otherwise they come out
sort of gummy.

This isn't exactly a quick meal...but here is where I'm putting it.


If you love,love,LOVE bacon,but you hate to cook it...
because of the mess and the splattering pops on your hands,
or for whatever reason...here is how to cook it.

This was my first time for oven cooking bacon.
Let me say this...I will NEVER,NEVER,NEVER pan fry bacon again.

Place the bacon on a foil lined cookie sheet (use two if it's not heavy duty)
Lay the bacon side by side,not over lapping the slices
Turn the oven on 350/375 degrees.
(Preheat or not,if you preheat it
your cooking time will be a bit shorter,
but the waiting time won't be any shorter.)
Put it in the oven on the middle rack for about 10/12 min.
Take it out of the oven (careful not to spill the grease)
and turn the bacon over.
Put it back in the oven for about 3/5 min.
Remove from oven,lay on paper towels to drain.
Just wad the foil up and throw it away,unless you save the grease.
It's ready to eat and you have no mess and you're not burned anywhere.
NO,it won't splatter all over the inside of your oven.
But if you think it will you can cover the bacon loosely with foil (one sheet)
From start to finish is about 20 min,give or take a few,
depending on how done you like your bacon.
If you follow these instructions your bacon will be crisp and flat,
perfect for sandwiches.

These are easy to make and taste great!

Cherry Pineapple Cookies

1/2 cup brown sugar
1/2 cup sugar
1/2 cup shortening
1 large egg
1/2 cup drained, crushed pineapple
1 teaspoon almond extract
2 cups flour
1/4 teaspoons salt
1/4 teaspoons baking soda
1 teaspoon baking powder
1 jar maraschino cherries




Directions

Preheat the oven to 375 degrees.

1. Cream the sugars and shortening together. Add the egg and beat until light and fluffy.
2. Add the pineapple, nuts, and extract and chopped cherries and mix well.
3. Combine the remaining dry ingredients. Add the dry ingredients to the creamed mixture.
4. Place the dough a tablespoon at a time on a greased baking sheet.
5. Bake for 10 minutes or until done. Cool on wire racks.


You can add crushed nuts to it if you like, I don't because I am
allergic to most of them...

This is made a whole lot quicker than it sounds like.
It is a delicious pie that is quick and easy to make.
Make it truly your own by using the fruits of your choice
and deciding on the coconut and nuts,with or without.



******** Million Dollar Pie ********

2 graham cracker pie shells,
1 large container of Cool Whip,
1 large can of crushed pineapple (drained),
1 large can of mandarin oranges (drained)
(if you can't find a large can use 2 small ones)
1 can Eagle Brand Sweetened Condensed Milk,
1/4 cup of lemon juice,
1 can of coconut flakes (optional),
1 small bag of pecan pieces (optional).


Pour Eagle Brand milk in a large bowl,add the lemon juice.
Mix 'em up.
Fold in the Cool Whip.
Add the fruits,the coconut,pecans (if you used them) and mix it all up.
Pour into pie shells (crusts) and refridgerate for about 3 hours.
(if you can wait that long)


We always had the option to add nuts,but I like it w/o them.
Mother always left out the coconut and added the nuts.
You can change it up a lot of different ways if you want to.
So go ahead and make it truly your own and let us know the results.

CHICKEN AND RICE SKILLET

4 chicken breast halves, skinless and boneless
1 or 2 Tablespoons canola oil (or other cooking oil)
1 1/3 cup milk
1 can cream of mushroom soup
1 box Uncle Ben's Long-Grain and Wild Rice, Quick Cook style

In a medium bowl, stir together the milk, soup, and rice - including the seasoning packet that comes with the box of Uncle Ben's rice. Set it aside.

Brown the chicken pieces on both sides in a pan of hot canola oil.
Turn the heat down to medium low. Cover. Cook chicken about 25 minutes more.

Turn the heat back on to Medium High.
Add the mixture of milk, soup, and rice.

When it comes to a boil, turn the heat down to low and put a cover on the pan.
Let it all simmer about 15 minutes, or until the rice is tender and liquid absorbed.

This makes enough for 4 servings.

Start with browning a pound of ground chuck with some chopped onion. Spoon off all grease. Then add 1/2 cup ketchup, 1/4 cup barbecue sauce, 1/4 cup water, 1 teaspoons prepared yellow mustard, 1 Tablespoon brown sugar, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon powdered garlic, and about 1/3 cup chopped green bell pepper. I let that simmer on top of the stove for about 20 minutes. Then toast some hamburger buns. I put some shredded Monterey Jack cheese on top of each sandwich. Wink

BROCCOLI CHEDDAR SOUP Recipe adapted from Averie Cooks
This is the best broccoli soup I've ever tasted!
1 tablespoon + 4 tablespoons butter, divided
1 small/medium sweet yellow onion, diced small
1 clove garlic, peeled and minced finely
1/4 cup all-purpose flour
2 cups chicken stock
2 cups half-and-half
3 cups broccoli florets and stems, diced into bite-size pieces
2 carrots, trimmed, peeled, and sliced into very thin rounds
3/4 teaspoon salt, or to taste
3/4 teaspoon freshly ground black pepper, or to taste
1/2 teaspoon paprika
1/2 teaspoon dry mustard powder
pinch cayenne pepper, optional and to taste
8 ounces grated high quality extra-sharp cheddar cheese - be sure to use cheese you grate yourself, which will bring a much improved taste to the soup

In a small saucepan, add 1 tablespoon butter, the diced onion, and sauté over medium heat until the onion is translucent and barely browned, about 4 minutes. Stir intermittently.
Add the garlic and cook about 30 seconds, stirring constantly so it doesn't burn. Remove from heat and set pan aside.
In a large heavy-bottom pot add 4 tablespoons butter, flour, and cook over medium heat for about 3 to 5 minutes, whisking constantly, until flour is thickened.
Slowly add the chicken stock and the half-and-half, while whisking.
Add broccoli, carrots, onion, and garlic.
Simmer over low heat for about 15 to 20 minutes.
Add salt, black pepper, paprika, mustard powder, and cayenne pepper. Simmer again another 20 minutes.
Grate cheddar cheese and stir most of it into the soup. Stir well. Save a little grated cheese to sprinkle over the top of each bowl of soup.
Makes about 6 cups of soup.

Look up your closest Pizza Hut phone number.
Dial it and order two medium pizzas, any crust, any amount of toppings...
except extra cheese...jump in your vehicle and go pick them up.
Two like this for $14.96 right now. No mess, no fuss and no clean up.

Cowboy Beans

(a concoction of beef, onion, garlic, mild peppers and pork and beans.)

Cook and drain the beef.........
(I add a bit of Dales seasoning or Worcestershire sauce while cooking)
Sauté the onion, garlic and peppers.
Add the drained beef and pork and beans to the sautéed stuff.
Cover and cook on low heat about 45 minutes,
remove from heat and serve.
(45 minutes gives the flavors plenty of time to blend together)

We have dished it up in 30 minutes
and we have slow cooked it for 90 minutes.
Just be sure to keep the heat down low.

We have had it as a side dish
and we have added bread and had it as a meal.

It's very easy, has just a few ingredients, measure 'to taste',
and you can add or omit ingredients as you like.

The versatility of this dish is one reason we like it so much...
well...that and the fact is it's just plain good Smile Smile

ConnieLea, about those cowboy beans. Are you generally starting with about a pound of ground beef? I'm guessing you might be guided by the number of people you're going to feed, and if there will be other foods as well.
Another question is what you might mean by mild peppers. Would that be bell peppers? I am chuckling about the difference in the way people refer to things depending on where you live.
While I'm on the subject, what do you call a carbonated beverage, such as Coca-Cola or Sprite or that kind of thing? Here in Iowa we call it pop, from the sound of when the bottle top is removed. https://en.wikipedia.org/wiki/Names_for_soft_drinks_in_the_United_States Surprised

Gloria, I usually start with about a pound and a half of beef.
I definitely am a carnivore Smile I usually use twice as much meat as called for.
Bell peppers are fine to use (I do sometimes) but in our grocery store
you can find cans of peppers called Rotel mild chili peppers.
They're usually used for Mexican dishes or chili, but we use them in this too.
I only use the mild ones, I'm not into hot Smile Smile
Here in Georgia most soft drinks are generalized as COKE.
There are exceptions though, I am a Dr Pepper drinker,
I usually say Dr Pepper but occasionally I do say coke when I mean DP.
Coke, Dr Pepper, Sprite and Mt. Dew are probably the most popular here.
In Ohio (I have relatives there) they say 'pop' too.
When I was younger we were visiting and one of them (around my age)
asked if I wanted a 'pop'...well...we had never heard that...
unless you were going to get popped Confused Shocked Smile
Needless to say I was quick to tell them they would get 'popped' back too.
Talk about confusion...but it was really funny afterwards.

ConnieLea, I enjoyed reading your message. I have a friend here who has said she always adds extra meat too. I guess there's no reason not to, although come to think of it, just this week there was something in the news about meat being a cancer causing food. But I suppose in a year or so, someone else will come up with a study showing there is not a relationship after all. Eggs used to be something we were told to eat only sparingly. Now "they" say eggs are a good food and, within reason, it's fine to eat them.
Here in Iowa the grocery stores have Rotel tomatoes with peppers in them. You can buy mild or hot Rotel tomatoes. They have been in the grocery stores just in the past 5-6 years or so, I think. I use a can of that when I make chili and always buy the "mild" variety. I'm not surprised to hear that Rotel offers peppers alone in cans. I have heard it's a southern item (Rotel) that people around the Midwest starting asking grocers for after seeing recipes that called for it.
You and I have Dr Pepper in common. I like that much better than other kinds of pop. Two of my clients are kind of "down and out" financially. When they come to my office for their appointment for therapy, I give each of them a bottle of Dr Pepper, which they've said they love but can't afford. I'm not well off myself but I can spare a bottle of pop. I've had people come in, fortunately not too often, who haven't had anything to eat for a day. I've given them my lunch, usually some sort of leftovers from the supper the night before. Now our town has a free evening meal for poor people, so I've suggested that to people in need. Several churches in this town have cooperated to make that happen. I'm so happy that good people are willing to go to that effort. The grocery stores give food for those dinners. Makes my heart sing. Very Happy

Gloria, you're absolutely right about the changes in foods
that are good for you and not good for you.
Both sets of my grandparents raised and ate their own meats,
chickens and eggs in their day.
Now 'they' say that none of the things they ate can be good for you.
It's not that the food isn't good for you,
it's all of the additives, preservatives and growth hormones
that 'they' put in the products that makes it not good for you.
Speaking of Dr Pepper, my mom hates it,
she says she had rather drink prune juice Smile Smile Smile
I drink Dt Dr Pepper and my hubby drinks regular Dr Pepper,
I call them 'leaded and unleaded' Smile Smile Smile
None of the grocery stores here donate to the needy straight out.
They usually have boxes or bags at the exit for donations from shoppers.
Maybe that would be called 'donating' by the store to some people,
but in my opinion, that is donations from grocery shoppers.
Even though it came from the store someone bought it then donated it.
We don't have any free meals served in our town on a regular basis.
Sometimes some of the churches have a night for that.
There are a couple of places in the next town that do lunch and supper.
The next town is only about 15 miles away, so it's not far off.
I've noticed several times your mentioning of your work,
but I can't remember if you've ever said what it is that you do.
If you don't want to elaborate here in the forums
I believe we're 'friends' here and you can message me...
