ConnieLea, I'm sorry your mother had to be in hospital for such a long time. I can only imagine how "stir crazy" a person could become after about 3 months. It's a reminder for the rest of us to be thankful for good enough health that we can enjoy being at home. Be it ever so humble, there's no place like home.

I was home alone this evening so I made two boiled eggs, chopped them loosely with a fork, put about 2 teaspoons of butter on them, stirred to melt the butter, and added a bit of salt and pepper. My dad used to make this for me when I was a little girl. I had a piece of toast with strawberry jam to go with it. If nothing else sounds good, I turn to this simple boiled egg dish.

Thank you, Gloria. She's on the mend now, but easily agitated
at not being able to do for herself like she had been.
Physical therapy is helping to fix that, it's a slow go but she'll get there.


We had breakfast for supper again.
Bacon, scrambled eggs, gravy and biscuits.

I fixed super for my mom last night.
We had meatloaf, green beans,
mac & cheese, onions and cornbread.

Just experienced my first kidney stone...not much of an appetite this week.
I had a BBQ sandwich, Nacho Cheese Doritos and a glass of milk tonight.

I had homemade vegetable soup and cornbread.
Cabbage (yuck), tomatoes, Crowder peas, green peas,
corn, onions, carrots and potatoes.

We've been eating very simply lately. Yesterday I made a beef roast in the crock pot. The simple process of putting the roast in with potatoes, carrots, and an onion, along with some golden mushroom soup. It's surprising how nice that comes out, considering how virtually no preparation goes into it.
ConnieLea, I'm glad you keep up with this Forum. Without you, it would disintegrate. Keep up the good work!

That roast sounds wonderful, Gloria.
The difference in yours and mine is I use onion soup mix vs. mushroom.


We had tuna salad, tomatoes and toast.

I had surgery to remove a bone spur on my heel this week so I can't walk for a few more days. It's really getting old, sitting here in the bedroom. But I'm thankful for the excellent care I've had. We've been eating simple sandwiches and soup that I prepared in advance. Today we had potato leek soup -- my favorite.
