SandiW & I thought we would try to get this thread started.
Hope y'all will join in with some great ideas.
If so this is the first of several 'meal' topics we may give a try.

***Low Country Chicken***
This is one of my "quick dinner" go to meals.
Sauté some sliced, boneless chicken (breast, thigh, whatever),
with some sliced sweet peppers and onions.
Add a couple sliced tomatoes or a can of diced tomatoes and season with a bit of crushed garlic, oregano and basil, salt and pepper
(or hot sauce) to taste.
Saute everything until done, and a bit juicy.
Serve over your favorite grits to which you have added a cup or two of grated sharp cheddar cheese, salt and hot pepper sauce to taste.
It's a great take on "shrimp and grits" for someone who doesn't eat shrimp.
Use chicken or shrimp and it can be served over pasta,polenta or grits .
This is easy to adapt to your own tastes.
If you don't like one thing substitute another.
Pretty soon you'll have your very own 'special' Quick Meal.

Great idea ConnieLea! I like making this quick recipe on weeknights. It's one of those leftovers that taste even better the next day, and heats up really easily in the microwave:

Sloppy Turkey Joes - healthier than using beef, and there so many spices and things in it that I don't notice a huge difference in taste.

Cook a package of ground turkey (usually comes in packages of a pound or so at the supermarket) on medium-high heat in a large pan, stirring and breaking it up into bits, until almost all the pink is gone.

Now stir in a diced red pepper and onion. Cook, stirring occasionally, until the pepper and onion are soft - a few minutes should do it.

Add in 2 cloves garlic, chopped or pressed through a garlic press, cook another minute.

Add in a small can of tomato paste and 1 cup of water, stir until paste is completely mixed with the rest of the "slop".

Now throw in a tablespoon or so of everything else! Feel free to leave out things you don't like, adjust the amounts, and add in whatever else you think might be good:
-vinegar (white, red wine, or cider all work)
-brown sugar (I add a few Tbs of this)
-Salt and pepper
-Cayenne pepper (start with 1 tsp, bump it up if you want more heat!)
-Tabasco sauce (optional if you want even more spice!)

Serve on potato rolls with a slice of american cheese melting on top. For leftovers, put in a bowl and cover with a dish or something when microwaving to keep the moisture in.

I've done something similar with beef with a few variations,like you said.

This can be a side dish or a meal depending on what you add.

***Potato Casserole***

1 package frozen hash browns
(use hash browns that come in a bag)
1 can of cream of chicken soup
1 cup of sour cream
1 bag of shredded cheese (your choice) I use sharp cheddar cheese
Save out about 1/4 of the bag of cheese
1/2 chopped onion

Mix everything together in a large bowl.
Spread the mixture into a 9x11 pyrex baking dish.
Bake in oven at 350 for about 25 min.
Take out of oven,check to see if potatos are done,
sprinkle the saved cheese on top,
return to oven for about 10 min. (give or take) to melt the cheese.
Remove from oven and enjoy.

This is the way I serve as a side dish,
usually with baked ham or meatloaf and green beans .

If I serve as a meal I cut up left over baked chicken and add it while mixing

Yummmm - both of these sound quick and good. Since my husband and I cannot eat turkey, the sloppy joe should also work with ground chicken or pork!

Here's one of my favorite meals:

Welsh rarebit: Heat up a 12 ounce beer (or white wine, or broth, water or milk), stir in a good spoonful (I like a heaping teaspoon) Dijon or deli mustard, 1 lightly crushed clove of garlic and 2 to 3 cups of sharp cheese (I use cheddar or gruyere, but whatever you like will work) that you have tossed with a teaspoon of cornstarch (to help emulsify the sauce), stirring over medium heat until it all melts to a nice goo. Serve over toast. Add a quick salad and dinner is served!

Here's one that goes together very quickly:

1 package frozen artichoke hearts prepared according to the package directions or 1 can quartered artichoke hearts, well drained
1 pound shrimp, peeled and deveined
2 crushed garlic cloves
1 lemon, zest removed (put into pasta cooking water) and juiced (juice goes with artichokes and shrimp)
1/4 cup olive oil, or vegetable oil of choice

Heat 3 to 4 quarts of water to the boiling point, add the zest of one lemon (removed from the fruit with a vegetable peeler), salt water to taste - cook 1 pound of pasta of choice, I prefer something substantial, such as buccatini, but this works really well with fettuccini. Cook pasta according to package directions and drain (retain 1/2 cup pasta water for sauce).

Sauce: Heat olive oil with garlic, saute 10 to 30 seconds, add shrimp and cook until almost done (about 3 to 5 minutes, depending on size), add artichoke hearts and heat everything through. Add salt and pepper or hot sauce to taste and the reserved lemon juice. Add hot pasta and toss well. You may need to add some of the reserved pasta water to make the sauce a bit soupy.

That's it. Pretty much everything cooks in the time it takes the pasta to cook.

Krazy's Koo-Koo For Chicken, Chicken
A quick and easy dinner for you to enjoy
  • 1 Small city
  • 1 Phone book
  • 1 Large appetite
  • 1 Working automobile
  • 1 Set of car keys
  • 1/4 tank of gas
  • 1/2 Chance of good luck
  • 2 Five dollar bills
  • 3 One dollar bills

Using a phone book, flip through the yellow pages until you come upon the letter "K". Scan through until you reach the word "Kentucky", followed by "Fried" and "Chicken". Using a large appetite, allow this location address to thoroughly seep into your brain, and mix well. The larger the appetite, the easier this address will be to attain.

Once the address is attained, remove body from the home, and place in a working automobile. Insert set of car keys into the ignition and begin to place in start mode. Using your eyes, pour your attention toward the gas gauge, making sure to have a minimum of 1/4 tank of gas.

Once the entire mixture seems to be in working order, whip directly down the street until you reach the destination that had seeped into your brain mixture, and begin entering building at a moderate pace.

Using 1/2 chance of good luck, inspect the line of people in front of you. If there is someone in line ahead of you, ask them what they drive, then regardless of what it is, tell them that you think they left their lights on. Using this tactic will insure you a quicker trip to the counter.

Once the counter is reached, order the family sized bucket, chicken only. Insert hand into pocket and pull out 2 five dollar bills and 3 one dollar bills. Place these bills in the hand of the cashier, and wait for change.

Once your chicken is completely fried and in the bucket, return your body to your working automobile, and return to your home in the reverse direction in which you came. Be sure to keep at least one elbow on the wheel as you eat the chicken and lick your fingers.

Once you have arrived home, place remaining chicken in fridge. Let chill overnight.

Once this chicken is completely chilled, remove from fridge and microwave covered on a plate for 1 to 2 minutes, or until completely heated.

Serve, and enjoy.

and you have to look in the 'P' section of the phone book.

OK guys and gals,this is a variation of one from the Navy
that my dad made for me...
I'm sure you've all heard of SOS (made with sausage or dried beef)
well this calls for ground beef.

*** Hamburger Gravy ***

Crumble about a pound of beef in frying pan,cook till as done as you like it.
Add flour (about 3 tablespoons)(give or take) to the grease and meat.
Add salt and pepper (amount is your choice)
Add milk as you stir till the pan is about 1/2 to 2/3 full.
Stir till it thickens into good gravy (how thick depends on how you like it)
Serve over toast or biscuits.
I think this would be great to try with SandiW.s' biscuits.

Here's the biscuit recipe: Super Simple Sour Cream Scones/Biscuits

for every 4 2" biscuits: Stir together 1 cup self-rising flour (use the scoop and level method - no need to sift) and about 1/2 cup sour cream (hold back a tablespoon or two to see if you like the texture, then add the rest as needed). This makes a sticky dough. Liberally flour a board and plop the dough into the middle. Scoop some of the flour on top of the dough so you can pat the dough out about 1/2" thick; cut into rounds or into quarters. Bake in a preheated 425 degree F oven for 12 to 15 minutes.

A really simple topping is your favorite condensed cream soup thinned with 1/2 can milk, heated to a simmer and poured over the biscuits. It's also good with whatever flavorful leftovers you may have - chopped ham, turkey or chicken, some chopped scallions and or mushrooms. Play with it - it's good with whatever is in the 'fridge!

Look at the *** Hamburger Gravy *** I posted.

Substitute sausage for the ground beef.

Good 'ole *** Sausage Gravy *** (with biscuits or toast)

That's my cousins favorite.
My daughter and I prefer the ground beef.
She likes hers on toast (but will eat biscuits) and I prefer biscuits.

I think Breakfast for dinner is a quick meal
Eggs (however they want them done)
Hash Browns
Bacon or sausage
Gravy and toast
Or sometimes pancakes with bacon
Or waffles
I have always found that breakfast foods
cook up the fastest, and it gives you a
little change from the "norm".
My grandson loves pancake night!
